Description

Gyeryongbaekilju 40% is a 40% ABV botanical spirit from Chungcheongnam-do built on glutinous rice and white rice, then enriched with an ambitious set of native botanicals: wild chrysanthemum, omija, azalea, and pine needles. Each addition contributes a distinct aromatic layer, creating a spirit that unfolds sequentially rather than presenting a single note. The nose is immediately floral — chrysanthemum's honeyed, slightly bitter petal character leads, with omija's bright tartness and azalea's delicate sweetness close behind. Pine needles arrive last as a clean, resinous freshness. On the palate, the body is medium with a smooth, gently coating texture. The glutinous rice provides a soft, rounded base while the botanicals take turns across the palate. Chrysanthemum's bitter-sweet floral tone opens, followed by omija's five-flavor tartness at mid-palate, azalea's gentle sweetness, and finally pine needle's clean, bracing lift in the finish. The progression is remarkably distinct — each botanical gets its moment. The finish is long and layered, with pine freshness and chrysanthemum bitterness persisting in a pleasant interplay. At 600ml, serve neat at room temperature to fully experience the botanical sequence, alongside grilled meats or hanjeongsik where the aromatic complexity can match multiple courses.
