Description
Gimcheon Baegeumdoga is a 12% ABV makgeolli from Gyeongsangbuk-do's Baegeum Doga brewery, stripped to an elemental grain bill of glutinous rice, non-glutinous rice, and nuruk. This minimal ingredient list forces the brewing technique to speak: the fermentation must carry all the flavor without assistance from fruits, herbs, or additional sweeteners. The result is a makgeolli where grain character comes through with unusual clarity, moving from soft sweetness to a gently tangy finish. At 12%, it has enough structural backbone to pair with fried dishes and substantial Korean fare, not just light snacks. The simplicity of the recipe makes each batch a direct reflection of the brewer's skill and the quality of the rice.
