Baepsae is a 23% ABV cheongju (clear rice wine) from Seoul's Ippeunkkoch Brewery that stands out through its herbal complexity. The base of rice and glutinous rice is infused with mosi leaf (ramie), ginger, and gujeolcho (chrysanthemum), creating layered green, spicy, and floral notes that unfold progressively with each sip. Despite the relatively high proof for a cheongju, the mouthfeel remains refined and composed rather than aggressive. The botanical additions stay integrated rather than dominating, resulting in a sophisticated traditional spirit that rewards slow, attentive drinking alongside formal Korean cuisine.
