Duru Traditional Brewing in Gangwon-do ferments domestic rice with Korean-made nuruk to produce this 8% makgeolli whose name translates to 'a night spent counting drinks' — a nod to slow, contemplative drinking. The aroma opens with warm steamed rice and a faint sourdough note from the nuruk culture. On the palate, the body is medium-full and pillowy, with a rice-porridge creaminess that coats without heaviness. Sweetness is restrained and grain-driven, closer to toasted rice water (sungnyung) than candy, and the finish carries a gentle yeast warmth that lingers just long enough before clearing. At 8% ABV it occupies a middle ground — too much presence for mindless sipping, too gentle for serious contemplation, making it ideal for unhurried late-night tables. Compared to lighter 6% session makgeolli, the extra proof adds a noticeable mid-palate warmth and longer grain echo. Serve at 6-8°C with kimchi-jeon where the lactic tang of aged kimchi meets the soft sweetness, or alongside yangnyeom chicken where the drink's creaminess tempers spicy-sweet glaze.
