The same domestic rice, kuk starter, and yeast base as the 11.5% version is used, but the lower fermentation ceiling keeps the body lighter and the sweetness gentler. On the nose, soft steamed rice and a faint lactic note dominate - there is none of the yeasty intensity of the higher-proof sibling. The first sip is smooth and milky, with a grain sweetness that sits in the background rather than commanding attention.
