Hahyangju is a 17% ABV brew from Hahyang Brewing in Daegu, made with glutinous rice and designated as Daegu Intangible Cultural Heritage No. 11. The recipe is spartan - just glutinous rice - which means every nuance comes from the grain quality and fermentation control. The nose is understated: warm mochi rice with a faint honey note. On the palate, the body is medium-full with the characteristic glutinous rice viscosity, coating the tongue with a gentle, persistent sweetness. The 17% strength adds warmth and length to the finish, which resolves with a clean, faintly tannic edge from extended fermentation. This is ceremonial-grade drinking, rooted in Daegu's local brewing tradition. Serve at 13-16°C with galbi-jjim where the rich braising liquid and the viscous body create a substantial pairing, or alongside a traditional banchan spread where the drink's composed warmth accompanies each dish without competing.
