Description
Haebangju is an 18.8% ABV herbal spirit from Gyeongsangbuk-do, made from young domestic haebangpung (sea-parsley or peucedanum japonicum) leaves. This coastal herb, common along Korea's shorelines, brings a distinctive green, slightly medicinal character that defines the spirit from first pour. The unconventional ABV of 18.8% suggests a careful calibration to preserve the herb's delicate aromatics without overwhelming them with alcohol heat. The nose is immediately herbal and green - fresh-cut coastal herbs, a mineral sea-breeze quality, and a subtle celery-like vegetal sweetness. On the palate, the body is light-medium with a clean, refreshing texture. The haebangpung character is unmistakable: green, herbaceous, and bracing, with a mild bitterness that recalls medicinal teas. There is an underlying salinity - almost maritime - that speaks to the herb's coastal origins. The mid-palate reveals a gentle sweetness that softens the herbal intensity. The finish is moderate and clean, leaving a cool, menthol-adjacent freshness and lingering herbal bitterness. The 375ml bottle is well-suited for exploratory sipping. Serve chilled at 10-12°C as an aperitif, with seafood dishes like grilled shellfish or raw fish, or with herb-forward Korean salads where the coastal character finds natural harmony.
