Gwahaju 23 is a 23% ABV traditional drink from Gyeongsangbuk-do made from 100% rice with no additional flavoring agents, fruits, or botanicals - a purist's expression where the quality of the grain and the fermentation technique must carry the entire flavor burden. The name gwahaju refers to a historical Korean brewing style where a portion of distilled spirit (soju) is blended back into fermented rice wine to arrest fermentation and raise the alcohol level, preserving residual sweetness while adding structural strength. This technique predates modern fortification methods and was traditionally used to produce shelf-stable wines for transport and storage. The product carries significant cultural lineage: it is connected to Traditional Food Master No. 17, Song Kang-ho, and designated as Gyeongsangbuk-do Intangible Cultural Heritage No. 11, both recognitions that underscore the historical importance of this specific gwahaju method.
