Gaya Brewery crafts this premium makgeolli from 100% Gimhae-grown rice, a single-origin approach that is uncommon in a category where blended or mixed-source rice is the norm. Gimhae, located in the southeastern lowlands of Gyeongsangnam-do, has been a rice-producing center since the ancient Gaya confederacy, and that agricultural lineage gives this bottle quiet provenance. The aroma is clean cooked rice with a gentle vanilla-like sweetness, and the first sip reveals a polished, almost silky grain texture that distinguishes it from rougher farmhouse pours. Sweetness is present but measured - it rounds off the midpalate without pushing into dessert territory. The finish is notably tidy: no trailing acidity, no funk, just a smooth fadeout. Where rustic makgeolli can overpower delicate foods, this one sits elegantly beside steamed mandu, tofu jorim, or lightly seasoned namul.
