Tokki Soju is a 23% ABV craft soju from Chungcheongbuk-do, built on glutinous rice, nuruk, yeast, and enzyme preparations in a fermentation-forward process. Unlike mass-produced diluted soju, Tokki takes the slower path — nuruk-driven saccharification followed by distillation that preserves the grain's character. At 23%, the spirit sits in a comfortable zone between session-friendly and characterful. The nose opens with steamed glutinous rice, a clean lactic note from the nuruk fermentation, and a hint of vanilla-like sweetness. On the palate, the body is light-medium with a smooth, almost creamy texture that reflects the glutinous rice base. The grain sweetness is rounded and gentle, more rice-cake than toasted-grain, with nuruk-derived umami providing quiet depth. A subtle yeasty warmth — reminiscent of fresh bread dough — carries through the mid-palate. The finish is moderate and clean, leaving a soft rice sweetness that fades gracefully.
