Pinesong Jumyeonggawon Brewery in Gyeongsangnam-do blends domestic glutinous and non-glutinous rice with nuruk for Nokpaju, a 15% brew with both Food Master designation and 2015 Visiting Brewery recognition. The dual-rice technique creates a texture that is plush from the glutinous component yet structured from the non-glutinous, giving it a satisfying chew without heaviness. The nose opens with roasted grain and a faint dried-persimmon sweetness. On the palate, the body is medium-full with graceful balance — sweetness and a gentle tannin from the nuruk co-exist without conflict, resolving into a moderately long, clean finish. Serve at 12-14°C alongside galbi-tang (short rib soup) where the rich bone broth and the rounded grain body complement each other, or with a plate of modeum-jeon (assorted pancakes) where the crispy textures benefit from the drink's smooth, slightly tannic wash.

Dam Pine (Damsol) is a 40% ABV spirit from Hamyang, Gyeongsangnam-do, where locally grown rice makes up 90% of the base and pine needles with fresh pine shoots contribute the remaining 10%. The aromatic profile evokes a Korean mountain forest — resinous, green, and layered — while the rice base grounds the spirit in grain-derived sweetness. Food Master No. 27, Park Heung-seon, oversees production, and the spirit has earned consecutive grand prizes at Korea Traditional Liquor quality competitions. Despite its high proof, the finish is cool and clean rather than fiery.
