Pinesongju (Solsongju) is a 13% ABV cheongju from Pinesongju Brewery in Gyeongsangnam-do, made with 90% Korean white rice and 10% Korean pine needles and young pine shoots — a recipe recognized under the Food Master tradition. The pine component is substantial at 10%, and it transforms the drinking experience: the nose opens with a crisp, resinous pine-forest aroma that cuts through the typical grain softness. On the palate, the body is clean and light-medium, with the pine introducing a refreshing, slightly bitter green note in the midpalate that lifts and brightens each sip. The finish is dry with a pleasant piney tingle that lingers. Designated a 2015 Visiting Brewery. Serve at 8-11°C with jeonbok-gui (grilled abalone) where the pine freshness complements the shellfish's sweetness, or alongside memil-jeon (buckwheat pancake) where the earthy buckwheat and piney brightness create an aromatic pairing.

The recipe includes citric acid and succinic acid alongside the spirit base, and this acid duo is a deliberately structural choice: citric acid provides brightness while succinic acid adds a rounder, more savory depth reminiscent of fermentation-derived complexity. The nose opens with concentrated black raspberry and a faint wine-like complexity, more aromatic than simple berry juice. On the palate, the body is medium-full with a smooth flow. The bokbunja concentration means the berry character is dense and layered, not just sweet — there is a tannic undertone from the fruit solids and a bright acid spine that creates genuine tension. The ten-year maturation creates a composed, unhurried character that separates it from young soju, with pine-shoot aromatics adding a distinctive herbal-resinous note. Minimal additions of salt and citric acid sharpen the finish without cluttering the profile.
