The potato doesn't announce itself loudly; instead, it weaves an earthy, starchy depth beneath the rice's cleaner top notes, like a root cellar scent folded into grain warmth. On the palate, the body is medium-full with a smooth, slightly waxy texture that carries both sweet and savory tones without letting either dominate. The finish is moderate in length, resolving with a gentle potato-starch dryness that's unusual and compelling. Where the brewery's 16% Seoju leans bold, this lower-proof version emphasizes elegance and drinkability. The potato's contribution is subtle but essential: a smooth, starchy mouthfeel that gives the mid-palate a pillowy quality rarely found in pure rice cheongju. The nose carries clean grain and a faint mushroom-like earthiness from the potato. The finish is quick and refreshing, with a whisper of mineral. The 700ml bottle is generous for table sharing.
