Korean Makgeolli

Malkeunsul Hae Wheat

맑은술 해밀

Naebyeonsan Brewery in Jeollabuk-do crafts this 15% makgeolli from rice and nuruk with an emphasis on clean texture that earns the 'malkeunsul' (clear drink) label despite its cloudy format. The nose is warm and wheaty — toasted grain with a soft sourdough edge from the nuruk culture. On the palate, the body is generous and creamy but the finish is notably tidy for a 15% makgeolli: no lingering funk, no cloying residue, just a smooth grain trail that fades cleanly. This tidiness makes it a strong dinner companion. Try it alongside haemul-ttukbaegi (seafood hot pot in a stone pot) where the briny, spicy broth needs a creamy buffer, or with golbaengi-muchim (spicy moon snail salad) where the cold, tangy salad and the creamy warm drink create a textural contrast that's hard to beat.
