Myeongse Brewing in Chungcheongbuk-do builds this 14% makgeolli on domestic rice, yeast, and enzyme treatment, with starch syrup and aspartame rounding the sweetness curve. The name promises plum fragrance, and the nose delivers — a ripe plum aroma with a hint of almond from the stone fruit family. On the palate, the body is rich and noticeably creamy, thicker than most standard makgeolli thanks to the higher ABV and starch syrup contribution. The sweetness is persistent but the plum acidity provides an undertow that keeps each sip from feeling static. The finish is mellow, with a rice-pudding coda. Serve well chilled at 5-7°C alongside tangsuyuk (sweet and sour pork) where the plum note and tangy glaze create a natural bridge, or with kimchi-jjigae where the bold fermented spice needs a sweet, cushioning partner.
