Jinmaek Soju is a 40% ABV whole-wheat distilled spirit from Gyeongsangbuk-do, made entirely from whole wheat soju base. This single-grain, single-ingredient approach is rare in Korean spirits and gives Jinmaek a distinctive identity. Whole wheat retains its bran and germ through the distillation process, contributing aromatic compounds that refined wheat flour would not — resulting in a spirit with more texture, earthiness, and grain complexity. The nose opens with warm wheat bread, toasted grain husk, a subtle malty sweetness, and an earthy, almost hay-like quality that signals the whole-grain character. On the palate, the body is medium with a textured, slightly grainy mouthfeel. The wheat comes through as a warm, bread-like presence — less clean and sweet than rice, more rustic and full-flavored.
