Saimju is a 16% ABV brew from Sariwon Brewery in Daejeon, made with Korean glutinous and non-glutinous rice. The dual-rice blend without nuruk or additional botanicals listed places full emphasis on grain character and fermentation technique. The glutinous rice contributes a rounded, slightly sticky sweetness, while the non-glutinous rice provides structure and a drier exit. The nose is warm and grain-forward: toasted rice with a hint of rice bran. On the palate, the body is medium-full with an even, composed texture — no surprises, no rough edges, just a steady grain warmth that carries through a moderate, balanced finish. This consistency makes it a dependable table wine for diverse Korean meals. Serve at 12-14°C alongside bulgogi where the sweet soy marinade and the grain sweetness echo each other, or with a banchan-heavy spread where the drink's neutral composure lets each small dish shine.
