Persimmonseong Makgeolli is a 6% ABV makgeolli from Gyeonggi-do, produced by Judasom Brewery using Gyeonggi-grown rice with erythritol, guk starter, and yeast. The use of erythritol as a sweetener is notable — unlike sugar or aspartame, erythritol provides sweetness with a very clean finish and zero aftertaste, keeping the overall profile tidy and non-cloying.
