Yeokjeon Brewery in Seoul's Mapo district — a rare urban craft operation — blends domestic non-glutinous and glutinous rice with nuruk to produce this 9% award-winner (2021 Korea Liquor Awards Grand Prize). The aroma opens with freshly baked rice bread, a mild floral-yeast character, and a clean mineral edge from refined water. On the palate, the dual-rice base creates a silky, layered texture: the non-glutinous rice provides structure while the glutinous rice adds creaminess. Sweetness is precisely calibrated — present but never dominant — and the finish carries a subtle grain-toast dryness. Serve at 10-12°C. Pairs with Korean BBQ galbi-sal (boneless short ribs) where the silky body matches marbled fat, or japchae glass noodles as a refined dinner companion.
