Yangyangsulgosgan Brewery in Gangwon-do engineers Modeunnale with a precisely calibrated grain bill: 39% domestic glutinous rice, 7.8% domestic non-glutinous rice, and 4.4% wheat nuruk, fermented in a clean water base. That glutinous-rice majority gives the cheongju a plush, rounded mouthfeel at 15% ABV, while the wheat nuruk introduces a subtle, biscuity undertone that pure rice fermentation cannot achieve. The aroma opens with warm grain and a faint floral-yeast note. On the palate, sweetness is moderate and well-integrated, rolling through a polished midpalate before a dry, slightly bitter finish cleans up. The 500ml format is generous enough for a full dinner pairing: try it with jeonbok-gui (grilled abalone) where the shellfish's sweetness and the drink's grain richness amplify each other, or alongside soft tofu stew where the plush textures align.
