Gapyeong Soju is a 25% ABV soju from Gyeonggi-do, crafted by Uri Doga using rice, ipguk, and yeast in a classic distillation approach. The use of ipguk rather than traditional nuruk gives the fermentation base a cleaner, more predictable profile, which translates into a polished spirit with minimal roughness. At its proof the delivery is confident and direct, yet the mouthfeel stays remarkably smooth through a crisp, dry finish. It pairs naturally with grilled meats, bossam, and delicate sashimi where clarity in the glass matters.
