Baekiju is a 35% ABV cheongju from Gyeongsangbuk-do that combines Korean rice with red garlic extract and licorice, producing a spirit where grain sweetness, herbal warmth, and a dry finish unfold in deliberate layers. The red garlic adds a savory depth rarely found in clear rice wines, while licorice rounds the edges without introducing overt sweetness. Dangdanghari is a 15% ABV fruit wine from Gyeongsangbuk-do that layers Korean bokbunja (black raspberry) over a rice-and-red-garlic fermentation base, creating a deeper berry character than typical sweet fruit wines. Malic and citric acid additions keep the finish bright and lively despite the lush, plush mid-palate texture. The rice-and-garlic foundation gives the wine an unusual savory undertone that adds dimension to what could otherwise be a straightforward sweet pour. It pairs well with soft cheeses and lightly sweetened desserts.
