Daejangbu 23 is a 23% ABV distilled spirit from Gyeongsangbuk-do, made from purified water, rice, yeast, jong-guk (seed koji), and barley. The dual-grain approach — rice and barley together — gives this spirit a broader grain profile than single-grain sojus, combining rice's smooth sweetness with barley's toasty earthiness. At 23%, it occupies a comfortable middle ground suitable for extended drinking sessions. The use of jong-guk rather than standard nuruk or ipguk suggests a specific fermentation approach with controlled seed cultures. The nose opens with warm grain — toasted rice meeting roasted barley — a light bread-crust sweetness, and a clean, straightforward character.
