K-Soju Jeonju Brewery in Jeollabuk-do ferments domestic glutinous rice with nuruk and purified water to produce this 15% yakju that favors texture and clarity over aromatic complexity. The nose is discreet — warm rice and a faint yeast-bread note. On the palate, the glutinous rice delivers a rounded, slightly viscous body that coats the tongue with gentle chestnut-like sweetness before tapering into a clean, almost mineral finish. There is no rough tannin or wayward funk; everything moves in a single, composed line. This restraint makes it an excellent match for delicate preparations: steamed godeungeo (mackerel) where the fish's oil needs a clean foil, or alongside a refined hanjeongsik spread where the yakju never oversteps. It also pairs well with dubu-jorim, where the soy-braised tofu's savory glaze finds a soft, grain-sweet counterpoint.
