Rice, nuruk, yeast, and a measured amount of syrup (mulyeot) combine into a smooth, composed pour where the alcohol warmth arrives as a gentle glow rather than a sharp bite. The syrup rounds off any fermentation rough edges, producing a finish that is lightly sweet, clean, and surprisingly nimble for its strength. Think of it as a Korean equivalent to an off-dry sherry in terms of food versatility. Serve at 10-14°C with galbi-gui (grilled short ribs) where the smoky char meets the smooth grain warmth, or with japchae (glass noodles) whose sesame oil and soy create an umami bridge.
