Jajak Makgeolli is a 12% ABV birch sap makgeolli from Gangwon-do, brewed on a samyangju (triple-fermentation) base using birch sap and nuruk. The use of birch sap instead of ordinary water sets this makgeolli apart immediately, introducing a cool, forest-like freshness rarely encountered in the category. The samyangju method adds structural complexity, so the body stays creamy and layered while the finish feels cleaner and more lifted than most makgeolli at this proof. At 500ml and 12%, Jajak sits at the premium end of the makgeolli spectrum, suited for deliberate sipping with fried or spicy Korean dishes.
