Persimmoniseul (Gamiseul) is a 23% ABV persimmon spirit from Chungcheongnam-do, made entirely from domestic persimmons. The single-ingredient approach puts the persimmon front and center, and the result is a spirit that captures the fruit's distinctive orchard character with unusual directness. Korean persimmons, when fully ripe, develop a deep, honey-like sweetness with subtle tannin complexity — qualities that carry through distillation into the finished spirit. The nose opens with soft dried persimmon, warm autumn orchard, a touch of cinnamon-like spice, and a gentle caramel sweetness. On the palate, the body is light-medium with a smooth, rounded texture. The persimmon character is unmistakable — a warm, honeyed fruit sweetness that is rich yet not heavy, with a subtle tannic dryness from the fruit's skin that adds structure. There is a pleasant autumnal warmth throughout, and the mid-palate reveals a faint spice note that echoes dried persimmon's natural complexity. The finish is moderate, clean, and gently sweet with a lingering dried-fruit warmth. The 375ml bottle suits personal enjoyment. Serve at room temperature or slightly chilled, alongside dried fruit and nut platters for a complementary spread, with mild Korean desserts like hotteok, or as an autumn-themed digestif that captures the season in a glass.
