Cheongjinju is a 16% ABV traditional brew from Gyeonggi-do, crafted at Traditionaljuyeongugaebalwon Brewery with glutinous rice, nuruk, and purified water — a minimal recipe that places full responsibility on fermentation craft. The nose is quiet and composed: steamed glutinous rice with a trace of honey and a faint floral lift from the nuruk culture. On the palate, the 375ml format invites focused attention, and the body rewards it — medium-full with a silky, almost oil-like coating that carries a gentle sweetness through the midpalate before tapering into a clean, moderately dry finish. The glutinous rice gives it more viscosity than a typical cheongju, creating a mouthfeel that lingers pleasantly. Serve at 10-13°C alongside banchan-heavy meals where its neutral elegance supports rather than competes, or with samgyeopsal-gui where the rendered fat needs a smooth, structured counterbalance.
