Chunpung Miju is a 12% ABV cheongju produced in Seoul by Chunpung Brewery, using an all-Korean ingredient set: non-glutinous rice, glutinous rice, nuruk, ipguk (cultured rice koji), yeast, and purified water. The dual-starter approach — combining nuruk's earthy complexity with ipguk's cleaner enzymatic conversion — creates a cheongju with layered clarity, where depth and precision coexist rather than competing. The brewery recommends storing it upright at 0-5 degrees Celsius, signaling that this is a fresh, living product where temperature and handling directly affect quality.
