Jahuihyang Chrysanthemum Wine is a 15% ABV brew from Jahuijayang Brewery in Jeollanam-do, crafted with domestic rice. Despite the chrysanthemum name, the listed ingredient is simply Korean rice, suggesting the chrysanthemum character may come through the nuruk culture or a traditional brewing method rather than direct infusion. The result is a polished, balanced yakju. The nose is clean with a hint of dried flower — understated rather than perfumed. On the palate, the body is medium and smooth, with an even sweetness and a precise, almost surgical finish that wastes nothing. Winner of the 2014 Korea Traditional Liquor Awards Encouragement Prize and the 2015 Grand Excellence Award in the yakcheongju category — a rapid ascent that speaks to the brewmaster's skill. Serve at 10-13°C with hoe (raw fish) where the precision lets each slice's character come through, or alongside banchan where the smooth, neutral body never overshadows.
